I find standard restaurant Carbonara a bit too creamy and heavy. My husband is Italian. His homemade version is a total game-changer—it’s bouncy, full of flavor, and much lighter than what we usually find when dining out. Best of all? It takes 10 to 15 minutes max to throw together, making it a dream weeknight dinner for our family of three!
đź›’ Ingredients (Serves 2 Adults + 1 Child)
250g Rummo Bucatini No. 6Â (The thick, hollow strands catch the sauce perfectly and are super bouncy! This is my all time favourite pasta!)

125g Pancetta (1 small pack)
1 tsp Olive Oil (Just a drop to get the pancetta rendering)
1 Large Egg White + 2 Large Egg Yolks
15g Parmigiano Reggiano (Grated)

The secret to why his version tastes so bouncy and light comes down to two kitchen hacks:
Egg-Yolk Focus:Â Instead of using full whole eggs, using two yolks and only one white creates a silky, velvety sauce without needing heavy cream or excess liquid.
Leaving the Excess Pan Fat Behind:Â After crisping up the pancetta, use a spoon to transfer only the crispy meat pieces directly to the pasta, leaving the heavy rendered grease in the skillet!
📝 Step-by-Step Instructions
Boil the Pasta:Â Bring a large pot of salted water to a boil. Drop in the Rummo Bucatini and cook according to package instructions (about 6 minutes for perfect al dente).

Crisp the Pancetta: Heat 1 tsp of olive oil in a skillet over medium heat. Add the 125g pancetta and fry until crispy and golden. Turn off the heat.

Whisk the Sauce: While the pasta cooks, whisk the 1 egg white, 2 egg yolks, and 15g grated Parmigiano Reggiano together in a bowl until smooth and combined.

Toss Immediately:Â Drain the hot pasta and return it straight to the pot (off the heat). Immediately pour in the egg-and-cheese mixture, tossing vigorously. The residual heat from the hot pasta cooks the egg gently into a creamy emulsion without scrambling it!
Add the Pancetta & Serve:Â Use a slotted spoon to transfer the crispy pancetta into the pasta, leaving the excess frying oil in the pan. Give it one final toss and serve hot!
